It’s that time of year again! For our third year in a row, we have created a blend of malt Scotch whisky especially for the Stranraer Oyster Festival. Going from strength to strength, the festival showcases the amazing culinary resources as well as the dedication and incredible love for the town of Stranraer. We are honoured to be a part of the festival and to create a whisky just for oysters!
The aim behind the whisky is that it goes with oysters. A tasty accompaniment to the ocean’s deli. But of course, you can enjoy the whisky however you please. For this year, we took our award-winning blend and finished it in an oyster stout cask. This cask was emptied from one of our blends, and was sent over to Langholm to the Borderlands Brewery where it was filled to age their oyster stout. Nine months later, it came back to us empty. We promptly filled it with our oyster festival blend and let it marry for 3 months. The result is unlike anything else.
Incredibly smooth, tastes much older than its 7 years, and the complexity keeps your palate curious and engaged throughout the entire dram.
Tasting notes:
Nose: smoldering embers give way to dry wood, french toast, maple syrup and cherry pipe tobacco.
Palate: smoke at first but then dissolves into tones of black forest gateau, burnt orange, toasted malt and hints of raw cacao bean.
Finish: medium-long, slightly chewy with warm spices and apricot.
